One of my favorite things to eat is Fish and chips! Maybe because i am part british? Nothing better than a nice crunch on the outside and soft flaky fish on the inside of a battered fish.
I wanted to try something different I use micro potatoes and cooked them like french fry’s they were really good!

Batter and temperature is the key to making great fish and chips.

2 cups of flour
2 tablespoons of baking powder ( help fluff the batter)
1 tablespoon of corn starch (Makes it crisper on outside)
1 teaspoon of salt
1 teaspoon of black pepper
1 cup of club soda maybe more you want the batter looser than pancake batter. ( club soda helps puff up the batter)
Fry at 350 degrees for 3 to 4 minutes each side.
don’t over crowd the pan or you will cause temperature to drop and have greasy soggy fish.

Pea puree:
2 cups of cooked peas frozen works well
4 tablespoons of heavy cream
1 tablespoon of butter
salt and pepper to taste.
Mix in a high speed blender till silky smooth!
